Our English hogget’s provide fantastic meat. Matured longer (11 – 24 months) than traditional Lamb (3-10 months), the resulting meat is physically larger and more flavoursome. Our boneless shoulder of lamb in a cushion shape looks great for the festive table. With no bone, the joint is easy to carve. With slightly longer cooking, the shoulder meat can be shredded.
